Veal obtained from the hardy Pyrenean Brown, Aubrac or Gascon breeds or from the cross-breeding of dams of these hardy breeds with males of the Charolais, Limousin or Blonde d'Aquitaine breeds.
The extensively reared calves remain with their dams for the first few months of their life. They are slaughtered when they are between eight and 12 months old with a minimum carcass weight of 160 kg.

I vitelli sono allevati in regime estensivo insieme alle madri nei primi mesi di vita. La macellazione ha luogo tra gli 8 e i 12 mesi di età e il peso minimo della carcassa è di 160 kg.
